Organic, Jerusalem artichokes are the roots of a species of sunflower. The white flesh is nutty, sweet and crunchy like water chestnuts when raw. They are very high in potassium. 1 cup contains 643mg of potassium which can help reduce heart disease and is particularly beneficial for people at risk of high blood pressure. These little potato-like nuggets also contain more protein than most other root vegetables.
