It is often roasted or baked with the skin on. If you're cooking a whole squash, be sure to pierce the rind in several places with a fork or small knife to release the steam as it cooks.

Beaver Dam peppers are actually an endangered heirloom pepper! Mild to medium hot pepper is crunchy, rich, and fruity with a sweet intro and a surprise spicy finish. These are good for slicing fresh onto a sandwich, stuffing, or pickling. Beaver Dam’s Scoville Heat Unit ranking is a scant 500-1,000, giving it a flavour more akin to a slightly spicy ripe bell pepper than even a mild Poblano. Popular ways of preparing these peppers are fried, stewed, pickled or roasted. Sold in 2 packs. Farm: Knechtel's Wellesley, ONNot Available
